This hearty recipe is a staple in my kitchen, especially in winter months when looking for a comforting dish packed with veggies. I keep everything on hand in the freezer and pantry. Quick and easy to pull ingredients together. I actually freeze cabbage during the summer in 2 cup bags just for this recipe.
Ingredients
1 lb ground beef
1 cup diced onion
1 cup sliced carrots
2 cloves garlic
16 oz canned diced tomatoes
15 oz red kidney beans
2 cups water
5 teaspoons beef bouillon
1 tablespoon parsley flakes
1 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon basil
1/4 teaspoon black pepper
2 cup shredded cabbage
1 cup elbow macaroni
Brown ground beef in stock pot, drain. Add all other ingredients except cabbage and elbow macaroni. Bring to a boil, lower heat, cover and simmer for 20 minutes. Add last 2 ingredients, boil again for 10 minute, simmer for 5 minutes, add extra water if pot simmers to low.
This is a simple recipe that can be changed to the desires of any family.
